Surprised no one has mentioned the simplest component to modify,,,,the big nut holding the steering wheel will reap the biggest reduction in lap times PLUS it's transferable between cars.

Yes that’s a good point, I can’t see myself selling anytime soon to be honest. 
I just looked at getting some nankang tyres but I don’t think they come in the same size as what’s on there currently… 

I have 205/50/17 and 255/40/17 

Do those sizes sound right ? If not what’s an ideal size on a 2.7 ?

225/45/17 is an alternative front size (fronts on 18" are 225 as standard) and rear can go 245/45 (slightly taller) or 245/40 (slightly shorter so may be better for track use) without ill effects.
