I love pheasant but the preparation is a bit of a faf.  We deal with a number of shoots and their clients pay thousands of pounds for the privilege of travelling from London for the 'sport'.  I'm reliably informed that there is no demand for the final product and that they are ultimately land filled.  What a criminal waste and yet more ammunition for the veggies.

My grandparents would give us pheasant every now and then (I remember it being quite tasty). They came from Middlesbro and were connected with shooting clubs up there.  Grandma would serve the plate, and as she handed it over cautioned "chew it carefully, you might find a bit of shot still in there" ....

Ah, those days of personal responsibility...

As a child we would holiday in Wales and it was a common sight to see pheasant and rabbit hanging from hooks in a butchers window.  I never see that here in 'rural' Suffolk and I suspect that it's probably banned as there's no traceability or barcode.

Game is still sold around here.  There's a few dealers who take any game from local shooters, then have butchers and pubs/restaurants as customers.  Squirrels, wood pigeons, rabbits, pheasants etc.  They're not keen on quails.  Not much meat on them.  Game hunters give a declaration of where shot and that's fine for traceability for wild animals.  I did look to have a small herd of deer at one time and if I kept them as a wild heard they could only be killed in season but they would have entered the food chain in the same way.

Ex wife worked for a well known restaurant in Glasgow that specialised in Scottish cuisine. Came out the side door on Sunday morning about 3am after a lock in and a well known local figure was dragging a deer carcass out of the back of a Landy destined for the kitchen.

@John K would have creamed himself at the sight of his rifle, he was a member of a rather elite gun club mind you.
